DELICIOUS DINING Looking for a dining experience with a difference? Tali Wiru in the Northern Territory’s Red Centre is one-of a-kind. In the heart of the Outback, you can feast on a four-course al fresco dinner against the magnificent backdrop of Uluru, Kata-Tjuta, and an enormous night sky. Every dish features local ingredients and native herbs – and you can wash each one down with a perfectly-paired glass of Australian wine.

If your ears pricked up at “wine”, then we’d definitely recommend checking out d’Arenberg Cube. Just 40 minutes’ south of Adelaide, in South Australia’s McLaren Vale, this quirky building appears to float in a vineyard. But the real magic lies inside. You can join a wine masterclass, sip different vintages at a tasting session, and nibble on Asian-inspired bites as you look out across the rolling vines. OUTDOOR ADVENTURES Sometimes, the best way to see somewhere is from above. So why not enjoy a bird’s-eye view of the Northern Territory and South Australia? You can float over Alice Springs and the surrounding desert in a hot-air balloon. Soaring 1,000 feet above the dusty Outback will give you a while new appreciation of
its colour, diversity and scale. You can choose between a private balloon flight for two, or opt for a larger group trip – the choice is yours. For something a little more adventurous, go heli-camping in the Chase Range. You’ll take an exhilarating helicopter flight over the dramatic Flinders Ranges in South Australia, then land just in time to watch the fiery sunset. Enjoy a two-course meal by the fire, then get cosy in your tent for a night beneath the star-filled sky. It’s the ultimate camping experience, with knockout views thrown in for good measure. CULTURAL EXPERIENCES Of course, we can’t talk about Australia without mentioning its ancient Aboriginal history. It’s the world’s oldest living continuous culture, dating back more than 65,000 years. In the Northern Territory, you can sail down the East Alligator River on a remarkable Guluyambi
Cultural Cruise. Your Aboriginal guide will offer insight into their customs, tell age-old myths, and explain the many traditional uses for the river’s plants. You can also learn about bush survival skills, including hunting and foraging. Fancy a slice of modern culture? Head to Adelaide Fringe Festival. The second-largest after the famous Edinburgh Fringe, it showcases the
